Rebounding from an off week

I've eaten like absolute shit the past week or so. Easter candy, crappy carbs, (non-paleo) etc. These things happen. What matters is, long-term. I felt like crap waking up today and I punished myself at the gym. I've set a 2 week goal of 5lbs, which will put me below what I was at before the binge (mostly water). Don't let yourself fall off the wagon, even though you feel like you've failed. That would be like making $40,000 this year and giving up? Instead of jumping back in and getting the $60,000 you wanted and deserve. That's like cutting your finger, and saying "Oh, well I cut my finger, might as well say 'fuck it' and cut the rest off". These are minor speed bumps on your way to excellence, DO NOT let it beat you.

Paleo coconut banana dark chocolate chip muffins

I had to post this delicious recipe. These will change your life.

Ingredients:

6 free-run eggs

1/3 cup coconut milk (canned)

1 teaspoon sea salt

1 teaspoon vanilla extract

1/4 cup coconut oil, melted

3/4 cup coconut flour

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 cup mashed ripe bananas (about 3 bananas)

1/2 cup dark chocolate chips

Instructions:

Preheat oven to 375.  Line a 12-cup muffin pan with paper liners.

In a large bowl, combine eggs, coconut milk, sea salt, and vanilla extract.  Whisk to combine.

Sift coconut flour, baking powder, baking soda, and cinnamon into the wet ingredients.  Whisk until no lumps remain.  Stir in melted coconut oil until well combined.  Fold in banana and chocolate chips (use your hands).

Fill each muffin cup to about a centimeter below the top of the cup. Sprinkle each muffin with a few additional chocolate chips.  Bake muffins for 15 to 18 minutes or until muffins are golden and spring back when pressed gently.  Once baked, cool for 10 minutes.

Going back to school

Hey people,

So I'm heading back to school so I can make more money to buy more grass-fed meat. I'm pretty excited for the opportunity to learn a skilled trade. I'll be taking a heavy equipment operator course (driving tonka trucks), which should be fun and challenging. I'm going to keep training at night for a couple hours, and on Saturdays for some extra coin. This will be a good example of someone who is very busy, by will make time to hit the gym. I'm not going to make any excuses, and you shouldn't either. I'll keep you guys posted on important events regarding my career path, but will be back to posting fitness related topics ASAP.
